Lemon Poppy Seed Bread - Gluten Free
If you are on gluten free diet then you can still enjoy many delicious breads and desserts which can be made from gluten free grains like oats, sorghum, amaranth, rice etc. Today we are sharing one recipe of bread which is made from oat flour and have the added benefits of poppy seeds which is anti inflammatory, boost immune system, improves bone density, aids in digestion and many more. This bread is easy to make and can be baked in 30 minutes.

Ingredients:
  • 2 and half cup oat flour
  • 4 eggs
  • 1 cup Greek yogurt
  • 3/4 cup Honey
  • 1/4 cup Lemon juice
  • 1 tsp lemon zest
  • 1/4 cup poppy seeds
  • 2 1/4 tsp Baking powder
 
Instructions:
Pre heat the oven at 350 F/180 C. Now beat four eggs together and add 1 cup of greek yogurt in them. Beat again to soft creamy texture. Now add honey, lemon juice and lemon zest. Mix all this things together and add oat flour, poppy seeds and baking powder mixing the better again.

Now pour the mixture into loaf pan and bake in pre-heated oven for 30 to 35 minutes. Now check if the tooth picks come clean one inserted in it. Cool it on room temperature and cut into slices. You can also use rolled oats instead of flour, if you cannot find it. Simply grind them in chopper or grinder.
